Braised Fingerling Potato Coins

Before last week, we had never tried fingerling potatoes. Now that we have, I feel as though we’ve been missing out. These potatoes are filled with so much flavor and are the perfect accompaniment to chicken or steak.

These tiny little things caramelize and get super tender while they cook. If you’re looking to change up your usual roasted potatoes, this is a great recipe to try!

Ingredients
  • 1 pound fingerling potatoes

  • 1 cup water

  • 2 tablespoons of butter, cut into eight squares

  • Sprinkle of garlic and herb (or your favorite) seasoning

Directions

    Cut a round of parchment paper to fit just inside a 12-inch heavy skillet and butter one side. Using a mandolin or other adjustable blade slicer, slice potatoes 1/8-inch thick.

    Arrange in skillet and add water. Add seasoning, salt and pepper to taste. Dot top with diced butter.

    Cover potatoes with parchment, buttered side down, and briskly simmer until tender and most of liquid has evaporated, 30 to 35 minutes.

    One of these days you are going to have to come over to my house and explain to me how to make this. I really have no idea what parchment paper is, what a mandolin is, and can your really cook potatoes with a piece of paper on it? So confused. But the result looks yummy. Also – what is a fingerling potatoe? Haha. I am SO getting cooking lessons for Christmas, I just know it…

    Haha ๐Ÿ™‚ Fingerling potatoes look like fingers, but fatter. Parchment is just a nonstick paper that comes on a roll just like tin foil or plastic wrap.
    Also, I would love to come give you lessons one day. I could at least teach you how to make a couple of different items that could be mixed/matched for a few different meals. Maybe for your birthday. ๐Ÿ™‚

    That would be awesome! Because really, I should be able to cook potatoes but it amazed me how much I really just had no idea what you were talking about exactly – and it’s just a potato! That’s just sad. But it definitely looked like yummy potatoes and it didn’t involve vegetables so that’s right up my alley.
