My obsession with tomatoes peaks this time of year, thanks to all the wonderful varieties of heirloom tomatoes available. I can’t resist all the bright, gorgeous colors and find myself grabbing loads of tomatoes whenever we hit the farmers market. We’ve also got three tomato plants in our backyard, so it’s safe to say we’ve been eating a lot of tomatoes recently (see here, here and here).

I didn’t have salsa in mind for these tomatoes when we bought them. I already have two salsa recipes that I love, and I thought I’d do something, I don’t know, fancier with them. When I found this recipe, though, I knew I had to make it. The orange color was enough to draw me in, and adding beer and tequila was something I’d never done to salsa before. I mean, does cooking tomatoes in beer not sound like a fantastic idea to you? After it’s cooked and blended, you get a salsa that has the bright flavor of tomatoes and punch from the tequila. It’s a unique flavor and one I won’t soon be forgetting.

Salsa Borracha

  • COOK TIME:
  • YIELD: about 5 cups
Ingredients
  • 1 large yellow onion, chopped

  • 3 cloves garlic, minced

  • 1-2 jalapeños, minced

  • ¼ cup neutral oil

  • 2 pounds tomatoes, chopped

  • 1 (12-ounce) bottle of beer

  • 1 tablespoon brown sugar

  • ¼ cup lime juice

  • ¼ cup chopped cilantro

  • 2 tablespoons tequila

  • Tortilla chips, for serving

Directions

    Heat oil in a large saucepan over medium heat. Add the onion, garlic and jalapeños and cook for 5 minutes, stirring frequently. Add the tomatoes, beer and brown sugar. Bring to a simmer and continue simmering until the mixture has thickened, 20-30 minutes.

    Add the lime juice, cilantro and tequila, then puree using an immersion blender, or transfer to a food processor or blender and puree in batches until the salsa reaches your desired consistency.

    I just came across your blog and was wondering if you went to Notre Dame (play like a champion today…)- then I read that your last name is Champion! That’s so great! I love this salsa – it looks delicious! I would love a big bowl in front of me right now!

      Funny you should ask that because my sister and brother in law are HUGE Notre Dame fans. They’ll be so excited someone asked this! 🙂

    This looks great, just wondering if you had any recommendations for which type of beer and tequila to use? Thank very much!

      I used a local craft beer, and I think it was some type of wheat beer. Any beer and tequila you would drink should be fine in this recipe.

  11. I do love a good salsa….and beer and tequila just makes it sound that much better 🙂
